Steel-Cut Oatmeal for One

1 teaspoon butter
¼ cup steel-cut oats
¾ cup water boiling
tablespoons nonfat dry milk powder
¼ cup water
1 teaspoon brown sugar
1 pinch cinnamon
  1. In a small saucepan, melt the butter and add the oats. Stir for 2 minutes to toast.
  2. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
  3. While the oats are simmering, mix the dry milk powder and water (or just use milk).
  4. Add the milk, stir gently to combine, and cook for an additional 10 minutes.
  5. Spoon into a serving bowl, add the brown sugar and cinnamon, and serve.
