Meat Loaf

2 lbs ground meat equal parts beef, bison, and lamb
1 egg
cups bread crumbs
¾ cups ketchup
1 teaspoon Dijon mustard
½ cup onion finely chopped
teaspoon salt
¼ teaspoon black pepper
¼ teaspoon dried thyme
teaspoon nutmeg freshly grated
  1. Preheat oven to 350 degrees.
  2. Mix together the egg, bread crumbs, ketchup, mustard, onion, and seasoning.
  3. Add ground meat and mix well.
  4. Shape into loaf on a non-stick baking sheet and glaze with piquant sauce (below).
  5. Bake at 350 degrees for 1 hour.

Piquant Sauce

3tablespoonsbrown sugar
¼teaspoonnutmegfreshly grated
1teaspoondry mustard powder
  1. Combine and glaze meatloaf.
