Broccoli-Rice Casserole

Ingredients

Topping:

2 slices hearty white sandwich bread, torn into pieces

¾ cup grated Parmesan cheese

4 tablespoons unsalted butter, melted

1 garlic clove, minced


Filling:

10 ounces chopped broccoli

3 cups cooked rice


cup onion chopped

½ cup celery chopped

½ cup butter

1 can mushroom soup

1 cup milk

8 ounces sharp cheddar cheese, grated

teaspoon cayenne pepper

salt to taste

Directions

Topping:
Adjust oven rack to middle position and heat oven to 350°F. Grease 13- by 9-inch baking dish. Pulse bread, ¼ cup Parmesan, and melted butter in food processor until coarsely ground. Add garlic. Set aside.

Filling:
Cook broccoli in either microwave or stovetop. Drain if necessary.

Sauté the onion and celery in butter.

In a casserole dish, combine the onion, celery, and butter with the remaining ingredients. Top with topping.

Bake at 350°F for 30 minutes.
